Breakfast Cakes

If you’ve made Wholier-than-thou Hot Cereal, your patience is about to be rewarded. You now have the option of using the leftover cereal to make these crisp little cakes. They’re like risotto cakes, only healthier. You can push them in both sweet and savory directions, depending on your choice of mix-ins or accompaniments. The cakes are extremely easy to make if you chill the cereal well beforehand. One word of advice: don’t freeze them. That experiment failed.
