Reducing Liquids
Evaporating water to intensify flavor

I have a drawer full of wooden spatulas with faded stripes across the upper parts of their handles. These marks represent measurements taken while reducing liquids. To get my bearings, I used to turn the spatula upside-down and dip it into the liquid before bringing it to a boil. I’d record the initial level by drawing a line on the handle in permanent marker. Then, during the reduction process, I’d use that line as a reference point. After the liquid had boiled for a while, I’d dip the spatula handle in again. By comparing the new level with the original mark, I could see how much progress I had made and determine whether more boiling was needed or whether, in fact, I had gone too far.

It worked reasonably well, but it made a mess of my spatulas. Nevertheless, I knew the principle was a good one, and eventually I found a more sensible way to implement it.

    I’m so glad you consider it useful. Some people have found the videos “too didactic” and “not funny enough”, but–if you got something out of this one–I’ve accomplished my goal.

    I just watched your video on pooling oil. I liked it very much, and upon reading your reply to Deborah about dip sticks, I prefer the pleasant and friendly personalities of video instructors and their efforts to be funny usually irritates me. You were perfect.

    You have made my day!! Ever since I launched this site and posted the videos, I’ve been feeling self-conscious about my un-show-biz persona, which has taken a number of slings and arrows. It’s nice to know it’s ok with you. And I’m very glad you liked “Pooling Oil”.
